This week, author Harold O. Wilson sits down with authors Bonnie Feldstein and Janice Marshall. Janice Marshall was born on Smith Island and is the wife of a waterman. She currently lives in Crisfield, Maryland and is a curator and preserver of the waterman culture. She has worked with the Board of the Chesapeake Foundation and currently teaches in the Roads Scholar Program of the Crisfield Heritage Foundation.
Chesapeake Cream Of Crab Soup- Janice Marshall's recipe:
1 lb. crab meat (Maryland crab is best)
2 10 oz. cans of cream of potato soup
2 cans of whole milk (measure in soup cans)
1/2 stick butter
1 cup sour cream
1 Tablespoon Old Bay (to taste)
In heavy bottom pot mix all ingredients in pot except crabmeat
Heat but DO NOT LET BOIL
Add crabmeat
Heat and serve.
